Kookoo Sabzi (Frittata)
My partner is Persian and has greatly influenced my cooking. This is one of his favorite dishes. It is essentially a frittata. This dish is full of herbs and is generally eaten for breakfast or dinner. This is a bit of stray from the traditional recipe. Feel free to add any veggies just like you would a frittata.
1 white onion
2 cloves garlic
2 cups chopped parsley
2 cups cilantro
1 cup chopped green onions
1 cup chopped dill
1/4 cup barberries (order on amazon)
2 tabs chopped walnuts
1/2 teas turmeric
1 teas salt
1/2 teas pepper
1/2 teas red pepper flakes
1 tabs nut flour (almond)
1 teas baking powder
6-8 eggs
A lot of olive oil
Slice onion into very thin shoe string strips. In a 12 inch cast iron skillet, sauté the onion and chopped garlic with olive oil until browned (5-6 min). Next add the herbs, spices, flour, and baking powder. Stir until the herbs are wilted.
In a large bowl whisk all the eggs together with a pinch of salt and the barberries. Add a bit of olive oil to the sautéed herbs. Pour over herbs and give a mix to separate the herbs throughout the eggs evenly. Pour a bit of olive oil around the edges of the skillet and place in an oven at 350 degrees for 30 minutes.
