Spicy Plum Chicken Wings
I absolutely love chicken wings. It is a guilty pleasure. These are sweet, tangy, and have a hint of spice to them. They defiantly keep you coming back for more.
Plum sauce:
1 cup brown sugar
5 ripe plums pitted
1/4 teaspoon salt
1 tablespoon orange juice
1/4 cup Apple cider vinegar
Juice one lemon
2 dried chipotle peppers.
1/4 teaspoon cayenne pepper
In a medium sauce pan, add all ingredients and bring to a simmer. Stir occasionally. Cook for about 15-20 minutes until the plums have dissolved into the syrup. Remove the chipotle chilies. Blend the sauce to make smooth.
Chicken wings:
1 cup flour
Salt and pepper
12 chicken wings
5 oz Frank’s Red Hot sauce
2 tablespoons honey ginger balsamic
Canola oil for frying
In a deep fryer or frying pan add canola oil enough to cover the chicken wings. Heat to 350 degrees F. Add 6 chicken wings at a time. Cook until golden brown.
Mix 1 cup of the plum sauce with the vinegar and and Frank’s sauce and toss the wings after they have cooked in the sauce.
