Tacos Al Pastor

Tacos are life. Especially here in Texas. In fact, they are trying to make the state food tacos. Seeing as I probably at least eat tacos for 1 or 2 out of 5 meals I eat a day shows how much I enjoy tacos. A taco a day keeps the Dr. away and pair it with a couple of margaritas and you have a complete food pyramid right!? The traditional tacos al pastor are made with pork, but for my recipe and being not such a huge fan of pork (being jewish and all).

Meat:

4 lbs chicken breasts (about 5-6 breasts)

1 16 oz can diced pineapple in natural juice

1 4 oz can chilies in adobo sauce

1/2 cup 12 year old white balsamic vinegar

8 cloves garlic

1 medium onion

1 fresh pineapple cored and peeled

In a slow cooker, add the can of pineapple, can of chilies with adobo, vinegar, garlic, and onion. Set to cook on low for 10-12 hrs. Stir occasionally.

Slice the cored pineapple into 1/2 inch slices and brush with olive oil. Place these on the grill. and get grill marks on them.


Once the chicken is done, shred using two forks.

 

Topping:

1 small red onion

bunch of cilantro

2 limes

salt

Minch the onion, dice the cilantro, and juice the 2 limes in a dish and add a pinch of salt. Stir and let sit for 30 minutes.

Serve the meat with the toppings and your favorite salsa on corn or flour tortillas. slice the grilled pineapple and place a piece in the tortilla and it is sweet, tangy, and spicy.
