Strawberry Rhubarb Pie

As many of you know, I LOVE PIE!!! However, I do not like a ton of sugar in my pie. So I always strive to lessen the sugar content. I have also been trying to figure out the perfect pie crust and well after much research and alterations I think I have created the perfect crust.

Pie crust
:

2/3 cups butter (chilled)

1 teaspoon salt (fine grain)

1 tablespoon vodka

5-8 tablespoons ice water

In a food processor or large bowl add the flour and salt and mix together. Chop the butter into small pieces and add. Mix the butter in using a pastry cutting tool or the food processor. Add the vodka. And pulse or mix. Then slowly add the ice water 1 tablespoon at a time until the mixture comes together in a ball.

Let this rest in the fridge for minimum 1hr in plastic wrap. I normally make the pie crust the night before.

To roll the dough out I lay wax paper down and place the ball down. Then I use another piece on top and roll the dough out to the size I need.

Why the vodka? The alcohol helps ferment the butter and creates more flakes.

Filling: 

3 cups star berries diced

1 cup rhubarb

2 tablespoons 18 year old balsamic vinegar

4 tablespoons honey

1/2 cup fresh grapefruit juice

1 teaspoon sea salt

2 tablespoons cornstarch

Dice each strawberry into 4 to 6 pieces. I dice the rhubarb up small like pea sized. You don’t want your fruit to small BC it will turn into a jam.


Add the fruit to a large bowl and add all the ingredients. I mix the cornstarch into the grapefruit juice to prevent lumps. Let this sit for 30 minutes to get all the natural juices out of the fruit.


Heat the oven to 350 degrees. Place the pie shell in a pie pan and add the filling. Bake for 45 minutes or until the edges of the pie shell are golden brown.

You can use a lattice on the top of this pie but I do t like to hide the ruby red beauty of the strawberries.
