Honey and Sage Sweet Potatoes
Despite it being 70 degrees at the end of January, my taste buds still are craving winter dishes. These sweet potatoes are comforting and filling and pair nicely with a roasted chicken or a roast. They are simple to make and really do hit the spot on a cold wintery night. This is if we ever see any here in Texas.
3 Lb’s Sweet Potatoes
2 tabs Butter
1 teaspoon dried sage or about 4 large fresh leaves chopped
2 tabs Honey
1 tablespoon olive oil
Salt and Pepper
Bake the sweet potatoes in a 425 degree oven for 45-50 minutes. Let Cool and Peel the skins off. Slice each potato into 1/4 inch round slices.
In a small sauce pan melt the butter add the sage and brown the butter for about 3-4 minutes until it turn golden grown and smells nutty.
Line a cookie sheet with parchment paper and drizzle the olive oil evenly. Place the rounds on the parchment paper and baste them with the butter and sage. Drizzle the honey over the top covering each round. finish with a pinch of salt and pepper.
Place in the oven for 6-8 minutes at 425 degrees until the honey has caramelized and browned.
