Pomegranate and Matcha Butter Cookies

Let me just start out by saying, I LOVE COOKIES!!! It’s really the only sweet food I like. I always bake a big batch of these and hand them out in cute boxes or tins to all my friends. This year I have been a little obsessed with pomegranates and matcha powder. It turns out it is perfect for the holidays creating a red and green presentation. I know you are thinking pomegranate in a cookie?!? Well it creates a sweet tart cookie perfect for coffee. 

This is a great project for the kids to get involved with and you can package them and send them to school for the teachers. 

1 cup butter 

1 cup white sugar 

1/4 teaspoon salt  

1 teaspoon vanilla 

1 egg 

2 2/3 cup flour 

Divide the dough into two halves. Add one half back to the mixer and add 

1 tablespoon pomegranate molasses

2 drops of natural red food coloring 

Add to the other half 1 tablespoons matcha green tea powder.

In a mixer, Cream the butter and sugar until light and fluffy. Add the egg and whip. Add the molasses, salt, and the vanilla and combine. Slowly mix in the flour 1 cup at a time until combined. 

Refrigerate dough for at least an hour. 

Spread flour on a surface. Roll the dough out and use a cookie cuttter to cut the cookies out. 


Bake at 400 degrees for 8 minutes on parchment paper.
