Chocolate Tres Leches

Over the holidays it was my Bubbe’s Birthday. Her favorite cake is tres leches wich is Spanish for 3 milks. She also loves anything chocolate so I decided to combine the two and whip up this beautiful Devil of a cake.
2 cups of flour

2 cups sugar

1 cup chocolate milk (you can use regular milk as well I was just being naughty)

2 teaspoons baking powder

1 1/2 teaspoon baking soda

2 teaspoons salt

1/2 cup dark chocolate cocoa powder

1/2 cup extra virgin olive oil (mild)

2 eggs

2 teaspoons vanilla extract

1/2 cup boiling water

1/4 cup licor 43

In a large mixing bowl, sift together the dry ingredients: flour, sugar, baking soda, baking powder, salt and cocoa powder.

In a separate smaller bowl, whisk together the wet ingredients: milk, olive oil, eggs, vanilla, and licor 43.

Combine the dry ingredients into the wet ingredients a small bit at a time. Making sure to mix it together before adding more dry ingredients. Once the ingredients have been combined, add the boiling water slowly continuously whisking until combined.
Grease a large baking dish 9 x 13 with olive oil.

Pour in the cake batter and cook for 30 minutes at 350 degrees or until a toothpick comes out clean.


3 milk pour over: 

1 can of evaporated milk

1 can condensed milk

1/2 cup whole milk

1/4 cup Bailee’s liqeuor

1/4 cup dark chocolate chips.

In a saucepan over medium heat add the whole milk and the Bailee’s and heat until boiling. Remove from the heat and add the dark chocolate and stir until melted. Add the condensed and evaporated milk and stir. Poke little holes in the cake just before you pour the mixture over to give it little holes for the mixture to stream in. Pour over the warm cake evenly. Let the cake rest until room temperature.

Whipped cream topping 

1 cup heavy cream

3 tablespoons confectioners sugar

1 teaspoon vanilla

Combine all ingredients. In a mixer or large mixing bowl whip until stiff peaks have formed. Evenly spread over the cake and refrigerate. Top with cocoa powder and shaved chocolate.
