Pumpkin Pesto

Pumpkin Spice Latte, pffft… try this Pesto on any pasta, marinade, or toss any veggies in it. I live to toss roasted carrots or brussel sprouts in this Pesto. Also, think thanksgiving turkey marinade. I also keep some in a jar most of the fall season, this time I used it on my famous Gnocchi recipe.

1 cup packed basil

1 cup pumpkin purée

1 tablespoon honey


Juice of half a lemon

1/4 cup Parmesan cheese

1/4 cup pumpkin seeds (toasted)

1/4 cup olive oil

2 cloves of garlic

Salt


In a blender, add the basil, pumpkin purée, cheese, lemon juice, honey, garlic, and pumpkin seeds. Turn the blender on and drizzle the olive oil in until combined. Add a pinch of salt to taste.
