CranApple Olive Oil Cake

Fruit Layer: 

2 Honey Crisp Apples

1/2 Cup Fresh Cranberries

3/4 Cup Brown Sugar


1/4 Cup Extra Virgin Olive Oil

 

Heat the oven to 350 degrees.

In a large cast iron pan, heat the olive oil and add the brown sugar, melt the sugar into the olive oil and spread evenly. Core and slice the apple into thin slices about 1/4 inch thick. Add the cranberries to the pan in the holes where the apples don’t overlap.

 

Cake Mixture: 

1 Cup flour

3/4 cup corn meal

1 teaspoon salt

3/4 cup sugar

1 cup fresh cranberries

2 teaspoons baking powder

1 tablespoon vanilla

3 large eggs

1/4 cup apple cider

1/4 cup buttermilk

3/4 cup mild extra virgin olive oil

 

In a large mixing bowl whisk together the flour, corn meal, salt, baking powder, and sugar. In a separate bowl whisk together the apple cider, vanilla, buttermilk, olive oil, and eggs. Slowly add the dry ingredient mix into the wet ingredients. Mix until there are no lumps. Stir in the cranberries. Add the mixture into the cast iron pan covering the fruit layer. Bake for 40 minutes or until a toothpick comes out clean.
