Saffron Porterhouse Pork Chops

When looking for meats (pork, beef, lamb) you are looking for marbling and fat. The more far the juicier the meat. Let me just say that I love saffron and garlic and this recipe does not hold out on either of them.
4 bone in porter house thick cut pork chops.

1 pinch of saffron

Olive oil for drizzling

1 tablespoon coarse salt


2 cloves of garlic

1 lemon

 

In a dry blender or coffee grinder add the salt, garlic and the saffron. Give it a pulse or two to combine. Zest the lemon over each side of the pork chops. Squeeze the juice over each side of the pork chop as well. Next rub each side of the pork chop down with the saffron and salt mix. Heat a grill to high heat. Sear each side for about 5 -7 minutes until cooked to medium. After removing them from the grill drizzle with a very robust olive oil. Serve with your favorite side dish. This pairs nicely with Spanish rice or grilled vegetables.
