Lemon and Lavender Cookies

2 1/4 Cup of Flour (Gluten Free Flour Mix)

1/2 Teaspoon baking powder

1/4 Teaspoon kosher Salt

1/4 Cup + 2 tablespoon EVOO


1 Cup Sugar

1 Large egg + 2 yolks

1 Teaspoon Vanilla

1 Teaspoon Lemon Zest

1 Teaspoon Lavender Flowers

 

Pre-heat the oven at 375 degrees F. In a mixer, add you sugar and olive oil. mix until smooth. Add your vanilla, baking powder, salt and lemon zest. Grind the lavender flowers into a powder and add. Mix until combined. Add the eggs. Add the flour one cup at a time until a dough forms. Bake for 15 minutes on the middle rack. Sprinkle with a pinch of citron salt and confection sugar. Serve these by themselves or along side some Peach Sorbet.
