Fried Okra

Food Fact: Okra is native to North-East Africa. It is harvested when the pods are young and green. This low calorie vegetable is rich in dietary fiber and antioxidants. They are also packed full of essential vitamins and minerals (iron, calcium, manganese and magnesium) that aid in immune defense, promote healthy digestion and healthy bone growth.

1 lb. Okra

1 Cup Buttermilk

1 Egg


1 Tablespoon White Vinegar

2 Cups Flour

1/4 cup corn meal

1 tablespoon cajun seasoning

2-3 Cups fresh crushed olive oil

 

Heat Olive oil in a frying skillet to 350 degrees. Using a cooking mallet or a small pan crush the okra starting at the tip to the stem stopping a quarter of an inch from the stem. This breaks the pods open and helps the batter stick to the okra with every bite. Whisk together the buttermilk, egg and vinegar. soak the okra in the wet mixture for about 5 minutes. mix together the flour, cornmeal, and cajun seasoning. At this point you will want to keep a wet batter hand and a dry batter hand. Shake off extra wet mixture and place the okra in the dry mixture and roll it around to coat. Place each okra, in small batches, in the oil and cook for 5-10 minutes until the batter is golden brown. remove the okra and sprinkle with a little paprika. Serve hot.
