
Beer and BBQ Beans
Food Fact: Originally from Oaxaca, Mexico, the Ayocote family was one of the first cultivated crops of the New World. Beans are high in fiber and are a great alternative to meats because they are a good source of protein. This specific bean is less starchy and contains less sodium than most strands.
2 Cups Ayocote Negro (Rancho Gordo) Beans (or any black beans)
2 hoppy beers (24oz)
1 Cup Brown Sugar
3 large tomatoes
1/3 Cup BBQ sauce
1 tablespoon dijon mustard
1 white onion
2 cloves garlic
1 tablespoon hot sauce (optional)
Rancho Gordo beans do not require to be soaked. If you are using another brand please soak the beans over night and rinse before using them in this recipe. Place the beans in a crock pot and add the beer until the liquid is about 1 inch above the beans. Dice the tomatoes and onion and add them to the mixture. Mince the garlic clove and add it to the crock pot. Add the hot sauce, brown sugar and the mustard to the crock pot and stir. Do NOT add salt until the very end because beans contain a lot of sodium.
