Zucchini with Tomato Sauce

Food Fact: Zucchini is a good source of potassium, antioxidants, and folates which have been shown to reduce blood pressure, aid in cell division, and eliminate free radicals which play a role in aging. So eat plenty of this very low calorie vegetable.

2 large zucchini

2 large heirloom tomatoes

2 cloves garlic

3 tablespoon Extra Virgin Olive Oil

1/4 teaspoon oregono

Pinch of red pepper flakes


Heat a small sauce pan, add the olive oil. Mince the garlic and add to the sauce pan. Brown the garlic. Mince the tomatoes and add to the olive oil and garlic. Add the oregono and salt to taste. Cook on medium high heat for five minutes then reduce the heat to low and simmer for ten minutes. Turn off the heat and set aside. Heat a large skillet, add about 2 tablespoons of olive oil. Thinly slice the zucchini and add it to the hot pan. Add a pinch of salt and sautée for 15 minutes stiring. Plate the zucchini and spoon the sauce over the top.
