
Rosemary Purple Potatoes
Food Fact: Purple Potatoes are very similar to Russet potatoes nutrition, however the purple potato contains a significantly higher level of antioxidants (4x the amount of a russet), the antioxidant Anthocyanin is a pigment that creates the purple color in the potatoes and also acts as an antioxidant that can lower blood pressure levels.
2 Lbs. Purple Potatoes
2 tablespoons extra virgin olive oil (rosemary, garlic, butter)
1 teaspoon fresh chopped rosemary
1 tab of butter
salt and pepper
First wash and skin the potatoes. Chop the potatoes into 1 inch cubes. Bring a large pot of water to a boil. Boil the potatoes for 15-20 minutes until they begin to soften. Remove from heat and place in a large mixing bowl. Drizzle the olive oil over the top and add the rosemary, salt and pepper. Mix softly to coat the potatoes in olive oil. Place the potatoes on a baking sheet lined with parchment paper and roast at 400 degrees for 30 minutes or until the edges are golden brown. remove the potatoes and place back into the mixing bowl and add the tab of butter and give them one more toss. Serve
