Goat Cheese and Tomato Tart

Food Fact: Adding Vodka or any liquor to your pie crust will help ferment the butter resulting in a flakier pie crust.


3 pie crusts (recipe below)

4 slicer tomatoes or 8 roman tomatoes

1 garlic bulb

1 Cup grated goat cheese

1 tablespoon EVOO for drizzling

Salt and pepper


Spread the pie crust into a parchment paper lined cookie sheet. Bake the pie crust for 10 minutes. Next, cut the top off the bulb of garlic and place it in foil and drizzle a little olive oil over the top. Close the foil around the bulb and roast at 350 degrees for 20-30 minutes. Squeeze the cloves of garlic out into a small bowl and crush with a fork, making a paste. Spread this past over the pie crust. Slice the tomatoes thinly and lay them on the pie crust evenly, slightly overlapping each one. Sprinkle salt and pepper over each tomato. Next, evenly spread the goat cheese over the top of the tomatoes. Place in the oven for 20-25 minutes or until the crust edges are browned. Remove from the oven and drizzle olive oil over the top.

Pie Crust: Yields 1 Pie

1 1/4 Cup flour + extra for dusting

1 stick of butter

1 egg

1 teaspoon Vodka (optional)
