Roasted Cauliflower Mash

This is a great alternative to the traditional mashed potatoes. Cauliflower is a great vegetable that for so long has gotten a bad wrap. However, it will absorb any flavor adorned on it.


1 large head cauliflower

4 small cloves of garlic

4-5 tablespoons robust olive oil

1/2 teaspoon smoked sweet paprika

salt and pepper

1 tablespoon plain greek yogurt

1 tablespoon butter

2 green onions


Preheat your oven to 400 degrees.

Wash and dry the cauliflower. Trim all the leaves and the thick part of the stalk off. Divide the Cauliflower into equal parts (a large head should make 8 equal parts). Lay these down on a large cookie sheet. Give each clove of garlic a slight mash with your knife and peel each clove. place on the cookie sheet scattered in the cauliflower. Drizzle Olive oil over each piece of the cauliflower, make sure to cover each piece thoroughly. Now sprinkle the paprika salt and pepper over the top. Place in the oven and cook for about 30-40 minutes or until the florets are browned. Place the butter and the yogurt in a large mixing bowl. Add everything from the baking sheet into the bowl. With a potato masher, mash everything together until the consistency resembles lumpy mashed potatoes. You can also use a food processor to do this part. Dice the green onions and sprinkle over the top and serve.
